cityfoodsters says: This is one of Azurmendi's classics. The egg yolk is inversely cooked; first, they pierce the yolk with a needle, take part of the egg yolk out with a syringe, and then inject a truffle consommĂ© (about 65ÂșC). This would cook the egg from inside out.
